Facts:Kale is a form of cabbage in which the central leaves do not form a head. It is considered to be closer to wild cabbage than most domesticated forms. A highly nutritious vegetable with powerful antioxidant properties; kale is also thought to be anti-inflammatory.
Storage:Keep in a perforated bag in the fridge. Use within two or three days as Kale becomes bitter the longer it is kept.
Preparation & Cooking: Pull the leaves from the stalk, then cut away the tough stalk in the centre. Wash, then chop or shred. Kale can then be boiled or pan-fried.
