Facts: The first cabbages of the year, spring greens do not have the hard heart of other cabbages but have fresh, loose heads.
Storage: Best kept in the fridge.
Preparation and cooking: Wash before use. Remove the leaves from the centre, and then shred. Spring Greens are delicious in stir-frys, or added to stews or soups. They are also delicious served on their own having been sliced and steamed with a knob of butter on the top! Be careful not to overcook though.
