Facts:Also known as eggplant, melongene, brinjal, or guinea squash. The plant is native to India. The name eggplant, rather than aubergine, is used in the United States, Australia, New Zealand, and Canada, and is thought to refer to the fruits of some 18th century European varieties which were yellow or white and resembled goose or hen's eggs!
Storage: You can store an uncut, unwashed aubergine in a plastic bag in the refrigerator salad drawer for three to four days
Preparation and cooking: Delicious on the barbecue or cooked slowly in a vegetable curry or ratatouille.
