Facts: Plum tomatoes are oval shaped and have a rich flavour and generally fewer seeds. Tomatoes are a member of the nightshade family, along with aubergines, peppers and chillies, and they are, in fact, a fruit but as they are used with other savoury ingredients they are generally classed as a vegetable. Tomatoes only became popular in Northern Europe in the 19th century, but today are one of the most important ingredients available as the skin, flesh and seeds can all be eaten.
Storage: Store at room temperature unless they won't be used for a couple of days. If that is the case, store in a perforated bag in the fridge. Remove them from the fridge 30 mins before eating so they can warm up.
Preparation and cooking: Wash before use, then leave them whole or halve, quarter, slice, chop or dice as required. If you need to remove the skins, cut out the stalk and make a cross on the bottom of the tomato with a knife. Place in a bowl of boiling water for 30 seconds, then drain. When cooled, the skin can be easily removed. Use in salads, soups, sauces, chutneys, stews or roast whole, halve and grill or sliced and fried.
