Facts: Although radicchio looks like a lettuce, it is in actual fact not part of the lettuce family - it is related to chicory. It has a tight head of leaves curled around a central core and is a rich maroon colour with white veins, and a peppery, bitter taste.
Storage: Keep in the salad drawer of the fridge for up to a week.
Preparation and cooking: Each leaf needs to be rinsed in cold water before use. Radicchio can be used raw in salads or can be grilled or roasted.
