Facts: Often people think of cucumbers as a fruit because it contains seeds to reproduce, but it is typically grouped with salad/vegetables due to its uses. Cucumbers contain sterols, which have been linked to lowering cholesterol in animals. Most sterols are found in the skin of the cucumber, so don't peel it! They also contain only a few calories, so they are a dream item if you are dieting! Cucumbers are also very good in aiding digestion and have an excellent cleansing effect on the bowel.
Storage: Keep in the salad drawer of the fridge. Once cut, wrap in a piece of kitchen roll to retain its moisture.
Preparation and cooking: Wash before use. Cucumbers are generally eaten uncooked and used sliced in salads or sandwiches. However, they can be sliced, coated in batter and fried or can be used in soups. They also can be stuffed and baked, similarly to a marrow. They are also sometimes used in dips.
